  • For the sauce:
  • 30 ml water (2 Tbsp.)
  • 80 g butter 
  • 1 ml salt (¼ tsp.)
  • 180 ml light brown sugar (¾ cup)
  • 180 ml evaporated milk (¾ cup)
  • 5 ml brandy (1 tsp.)
  • For the waffles:
  • 375 ml cake flour (1 ½ cups)
  • 15 ml baking powder (1 Tbsp.)
  • 2,5 ml salt (½ tsp.)
  • 30 ml sugar (2 Tbsp.)
  • 125 ml milk (½ cup)
  • 125 ml buttermilk (½ cup)
  • 45 g butter, melted
  • 2 eggs, separated
  • Waffle iron

Background & Method

This fluffy waffles with evaporated milk butterscotch sauce recipe is absolutely moreish. So if you have a large appetite, don’t forget to double the waffle recipe.

Step 1

Combine water, butter, salt, and brown sugar in a medium pot. Bring to a simmer and cook until sugar dissolves, about 3 minutes. Add evaporated milk and continue to simmer until sauce is thick, about 12 minutes. Stir in brandy and simmer for another 2 minutes. Set aside and let cool. The sauce will thicken as it cools. 

Step 2

In a medium mixing bowl, sift flour, baking powder, and salt together. Stir in the sugar. Gradually stir in the milk, buttermilk, melted butter, and beaten egg yolks. In a separate bowl, beat egg whites until stiff peaks. Gently fold the stiff egg whites into the batter. 

Step 3

Set waffle iron to medium-high and preheat until the indicator is ready. Ladle the batter into the iron. Cook the waffles until golden and crisp. Serve immediately.

Notes

  • The waffle part of the recipe will make 4 to 6 waffles, but it depends on the size of your waffle iron and how thick you want your waffles.
