It's an absolute moment: Crumbed pork steaks drenched in a creamy port wine sauce with mashed potatoes and green beans.

  • Crumbed pork neck steaks:
  • 6 thin pork neck steaks
    (1 to 1,5 cm / ½ inch thick)
  • Salt
  • 125 ml flour (½ cup)
  • 10 ml salt (2 tsp.)
  • 2,5 ml ground black pepper
    (½ tsp.)
  • 2 eggs, beaten
  • 250 ml dried breadcrumbs (1 cup)
  • 60 ml cooking oil (4 Tbsp.)
  • Creamy port sauce:
  • 1 large onion, chopped
  • 3 garlic cloves, crushed
  • 60 ml butter (60 g / ¼ cup)
  • 5 ml smoked paprika (1 tsp.)
  • 15 ml flour (1 Tbsp.)
  • 180 ml port wine (¾ cup)
  • 250 ml chicken stock (1 cup)
  • 15 ml tomato paste (1 Tbsp.)
  • Salt
  • 1 ml ground black pepper (¼ tsp.)
  • 10 ml lemon juice (2 tsp.)
  • 125 ml pouring cream (½ cup)
  • 60 ml parmesan cheese, grated (¼ cup)
  • Fresh parsley, chopped for garnish

Background & Method

This crumbed pork with a creamy port wine sauce recipe is divine. It’s classical, subtle, and delicious. It’s a dish you will cook over a weekend when you host a dinner party with friends.

Step 1: Prepare steaks

Season steaks generously with salt. Mix the flour, salt, and pepper. Dip each steak first in flour mixture, then in beaten egg followed by breadcrumbs. Place in the fridge for at least 30 minutes to set. 

Step 2: Prepare sauce

While meat is chilling in the fridge, make the sauce. In a small saucepan, sauté onion and garlic in heated (not burnt) butter over medium-low heat, about 3 minutes. Add the smoked paprika, continue cooking, about 1 minute. Add flour and stir. Then add the remaining ingredients, except cream, parmesan, and parsley. Simmer over low heat, about 8 minutes. Set aside.

Step 3: Fry steaks

Before frying the steaks, preheat your oven to 160 °C / 325 °F. Then, in a large frying pan, heat the 60 ml cooking oil over medium-high heat and fry steaks until golden brown. Drain on paper towel. 

Step 4: Baking and final touches

Place the steaks in an ovenproof dish and pour sauce over. Cover with a lid or foil and bake for 45 minutes. Stir in cream, top with parmesan cheese and parsley. Serve immediately.

Notes

  • Serve with creamy mash and steamed green beans with garlic butter. 
  • The steaks should weigh about 110 g / 4 oz. each and about 1 to 1.5 cm (about ½ inch) thick.
  • I prefer to use a relatively good quality sweet wine in this recipe. A port or muscat type of wine. Marsala (Italian sweet wine) works just as well.
