These crispy potato cubes with chorizo sauce are the ultimate party snack. It’s super easy to make and your party guests will feel all the love they need.

Step 1: Make the sauce
Heat olive oil in a heated medium-sized saucepan/pot over medium heat. Add red onion, garlic, chili, green pepper and smoked paprika. Cook for about 3 minutes. Add chorizo and continue cooking for about 2 minutes. Add chopped tomatoes, salt and black pepper to taste, and soy sauce. Bring to a boil. Decrease heat to low and simmer for about 15 minutes. Stir in the cream and cook for another 3 to 5 minutes. Set aside.
Step 2: Fry the potato cubes
In a large saucepan or pot, heat 2.5 cm / 1-inch oil over high heat until it reaches a temperature of 185°C / 365 °F (if using a thermometer). Add potatoes (in batches if needed) and fry until golden brown and crispy. Drain on kitchen towel. Season generously with salt.
Step 3: Assemble
Quickly reheat the sauce if necessary. Place the fried potatoes on a serving plate. Add the sauce. Garnish with chopped coriander and grated parmesan.
