What an absolute quick and easy moment melting in your mouth. It's one of those side dishes that becomes the main focus at a braai (barbecue).

  • 375 ml cream (1 ½ cups)
  • 1 can of creamed sweetcorn
    (400 g / 14 oz.)
  • 60 ml butter, melted
    (60 g / 2 oz.)
  • 2 garlic cloves, minced
  • 750 ml cheddar cheese, grated
    (+/- 400 g /14 oz.)
  • 6  large potatoes, sliced
    (⅛ inch / 3 mm thick)
  • Salt
  • Freshly ground black pepper
  • 250 ml fresh thyme leaves
    (about two bunches of thyme)

Background & Method

Step 1

Place cream, creamed sweetcorn, butter and garlic in a jug or bowl. Mix until combined and set aside. Make sure the cheese is prepared and set aside 250 ml of the grated cheese.

Step 2

Preheat oven to 180°C / 350°F. Place ⅓ of the potato slices in a greased baking dish in a single layer. Season with salt, black pepper, and about ⅓ of the thyme leaves. Pour about ⅓ of the cream mixture over the layer of potatoes and spread evenly. Add about ⅓ of the remaining 500 ml of grated cheese. Repeat the whole process twice for the second and third layer, but do not add any cheese on the top layer.

Step 3

Cover baking dish with lid or foil and bake for about an hour or until the potatoes in the middle are soft. 

Step 4

Remove foil or lid, top with the reserved 250 ml grated cheese (or more), and continue baking for another 10 to 15 minutes until golden. Let it rest for about 5 minutes before serving.
