Face first into these yummy cheesy, saucy and slightly spicy scones. It's perfect for a Saturday morning in the sun.

  • Cheesy butter sauce:
  • 110 g cheddar cheese, grated (4 oz.)
  • 110 g butter (4 oz.)
  • 5 ml Dijon mustard (1 tsp.)
  • Pinch of cayenne pepper 
  • Scones:
  • 500 ml cake flour (280 g / 10 oz.)
  • 20 ml baking powder (4 tsp.)
  • 2,5 ml salt (½ tsp.)
  • 10 ml mustard powder (2 tsp.)
  • 1 ml cayenne pepper (¼ tsp.)
  • 60 ml butter (60 g / 2 oz.)
  • 180 ml milk (¾ cup)
  • None.
  • You don’t even need self-confidence, just an empty stomach and lots of enthusiasm.

Background & Method

My grandmother had her moments in the kitchen. This scones in cheese sauce recipe is one of them with the scones soaking up all the cheese and butter while it’s baking. Cheers and thank you, Ouma!

Step 1

Preheat oven to 200 °C / 400 °F and grease an ovenproof dish with butter.

Step 2

Put all the sauce ingredients in a small saucepan and slowly bring to a boil until the butter and cheese have melted. Stir to combine. Set aside.

Step 3

Mix the flour, baking powder, salt, mustard powder, and cayenne pepper together in a mixing bowl.

Step 4

Cut the butter into small chunks and rub it into the flour mixture, using your fingertips or a pastry cutter. Do not overwork the dough.

Step 5

Add the milk and mix gently until just combined and forms a relatively stiff and manageable dough. Again, do not overmix the dough.

Step 6

Pour the sauce into the prepared ovenproof dish and distribute evenly if necessary. (Quickly reheat sauce if it has solidified while you prepped the dough.)

Step 7

Add (table)spoonfuls of dough into the sauce, leaving about 3 to 4 cm space between each scoop of dough. You’ll end up with more or less 10 to 12 scones. Top generously with grated cheddar cheese and a pinch of cayenne pepper. Bake for 15 to 20 minutes until almost golden-brown on top.

Notes

  • I use a 25 cm / 10 inch round ovenproof dish.
  • Serve with a pot of proper English tea.
  • If you are not so keen on using cayenne pepper, substitute with smoked paprika.
