Step 1
Cook the noodles according to the instructions on the packaging. Don’t overcook the noodles. They will continue cooking with the sauce in the wok for a bit as well.
Important note: If you use any other noodles, like spaghetti or instant Chinese egg noodles, only use about 250 g (8 oz.) or double the sauce ingredients.
Step 2
Mix all the ingredients for the sauce in a small bowl and set aside.
Step 3
Heat the oil in a heated wok over very high heat. Add mushrooms and fry, stirring frequently, until golden brown. Season very lightly with salt.
Step 4
Add the sauce to the wok with the fried mushrooms and fry for another 2 to 3 minutes over medium-high heat until fragrant. Add the noodles, mix well, and fry for another minute. If you prefer it a bit saucier, add a tablespoon of water at a time while tossing the noodles. Garnish with sesame seeds and spring onion. Serve immediately.
