These are the rolls you bake with a flavorful saucy dish. They soak up all the deliciousness of the sauce. They are just as good with lots of butter and white wine.

  • 125 ml lukewarm milk
    (½ cup / 125 g / 4.5 oz.)
  • 180 ml lukewarm water
    (¾ cup / 180 g / 6.4 oz.)
  • 7,5 ml sugar (1 ½ tsp.)
  • 7,5 ml instant yeast (1 ½ tsp.)
  • 930 ml bread flour
    (3 ¾ cups / 520 g / 18 oz.)
  • 7,5 ml salt (1 ½ tsp.)
  • 60 ml butter, melted
    (60 g / 1.5 oz.)
  • None.
  • Or maybe a savings account to easily afford all the butter you’ll need to spread on these rolls.

Background & Method

Soft, but firm. They soak up all the juicy goodness in any pot or pan. A quite random, but delicious combo: this easy Portuguese rolls recipe and our Moroccan roasted chicken.  

Step 1

In a jug, mix the milk, water, sugar and yeast until combined. Let sit for 5 to 7 minutes until foamy.

Step 2

In a large mixing bowl, mix together the flour and salt. Add the foamy yeast mixture and melted butter. Stir to combine. 

Step 3

On a floured counter top or in a large mixing bowl, knead mixture thoroughly into a smooth, but quite firm and manageable dough. 

Step 4

Place the dough into a large greased bowl, cover with a damp cloth or towel, and place in a warm spot. Let the dough double in size, about 1 to 1 ½ hours. In the meanwhile, grease a baking sheet (or line with parchment paper).

Step 5

When the dough has doubled in size, divide the dough into 8 equal pieces, about 105 g or 3,7 oz. each. Shape them into tight oval-shaped rolls. Place the rolls on the greased baking sheet, cover with a damp cloth or towel, and place in a warm spot. Let the rolls double in size, about 30 minutes. In the meanwhile, preheat the oven to 200 °C / 400 °F.

Step 6

When the rolls have doubled in size, sift flour over each roll and slash each piece of dough with a sharp knife. Bake for 20 minutes or until brown. Let cool slightly on a cooling rack and serve warm.

Notes

  • Environmental factors and measuring accurately differ from kitchen to kitchen, when busy preparing the dough, follow your gut as to how much additional water or flour to add if needed. Just make sure you end up with a smooth, but quite firm and manageable dough. Add a bit more flour if your dough is too wet and more water if it is too stiff/dry.
