Soft, but firm. They soak up all the juicy goodness in any pot or pan. A quite random, but delicious combo: this easy Portuguese rolls recipe and our Moroccan roasted chicken.
Step 1
In a jug, mix the milk, water, sugar and yeast until combined. Let sit for 5 to 7 minutes until foamy.
Step 2
In a large mixing bowl, mix together the flour and salt. Add the foamy yeast mixture and melted butter. Stir to combine.
Step 3
On a floured counter top or in a large mixing bowl, knead mixture thoroughly into a smooth, but quite firm and manageable dough.
Step 4
Place the dough into a large greased bowl, cover with a damp cloth or towel, and place in a warm spot. Let the dough double in size, about 1 to 1 ½ hours. In the meanwhile, grease a baking sheet (or line with parchment paper).
Step 5
When the dough has doubled in size, divide the dough into 8 equal pieces, about 105 g or 3,7 oz. each. Shape them into tight oval-shaped rolls. Place the rolls on the greased baking sheet, cover with a damp cloth or towel, and place in a warm spot. Let the rolls double in size, about 30 minutes. In the meanwhile, preheat the oven to 200 °C / 400 °F.
Step 6
When the rolls have doubled in size, sift flour over each roll and slash each piece of dough with a sharp knife. Bake for 20 minutes or until brown. Let cool slightly on a cooling rack and serve warm.
