Background & Method

In the Philippines it is known as sinangag and this divine garlic fried rice recipe pairs wonderfully with chicken adobo

Step 1

In a smallish saucepan, heat the oil over medium heat. Add garlic and cook for 1 to 2 minutes until almost golden, soft and very fragrant. Make sure it doesn’t burn. Strain oil through a fine-mesh strainer into a wok. Keep the cooked garlic aside until step 2.

Step 2

Heat garlic oil in your wok over high heat. Add the rice, swirl and mix to coat with garlic oil. Cook for about 4 to 6 minutes, while stirring and tossing. Add the cooked garlic to rice and stir to combine. Serve your garlic fried rice immediately with chicken adobo.

Notes

  • For best results for this garlic fried rice recipe, use leftover cooked rice from the previous day. It’s firmer and slightly fermented.
