What a moist and irresistible way to use those apples waiting to rot in your fruit basket. A dessert that would make your guests slide off their chairs.

  • For the apples:
  • 4 medium apples, peeled and cored
  • 30 ml butter (30 g / 1 oz.)
  • 2,5 ml cinnamon 
  • For the batter:
  • 3 large eggs
  • 250 ml granulated sugar
    (200 g / 7 oz.)
  • 45 ml butter, melted
    (45 g / 1½ oz.)
  • 5 ml vanilla extract 
  • 250 ml cake flour
    (140 g / 5 oz.)
  • 10 ml baking powder (2 tsp.)
  • 5 ml cinnamon (1 tsp.)
  • 2,5 ml ground cardamom (½ tsp.)
  • 1 ml salt 
  • 80 ml milk 
  • For the cream sauce:
  • 250 ml pouring cream 
  • 45 ml butter
    (45 g / 1½ oz.)
  • 180 ml granulated sugar
    (150 g / 5 oz.)

Background & Method

This spiced creamy apple bake recipe is the definition of moist, wet, and syrupy in your face. Nothing else.

Step 1

Slice apples, about 1 centimeter (about ½ inch) thick. Heat butter over medium heat in a frying pan, add apple slices and cinnamon. While stirring, sauté until soft, about 4 minutes. Set aside.

Step 2

Preheat oven to 180 °C / 350 °F and grease a deep 25 cm (10 inch) round ovenproof dish (see notes). Combine eggs and sugar in the bowl of a stand mixer fitted with the whisk attachment (a handheld electric beater in a normal mixing bowl, will also do the thing). Whip on medium-high until very thick and fluffy, about 6 minutes. Add the butter and vanilla to the egg mixture and whip until combined.

Step 3

Meanwhile, sift together the flour, baking powder, cinnamon, cardamom, and salt. 

Step 4

Alternately add the milk and sifted dry ingredients into the egg mixture, mixing until combined.

Step 5

Pour the batter into the prepared ovenproof dish, add apple slices one by one to distribute evenly all over the batter. Bake for 30 minutes.

Step 6

Start with this step when there are 5 minutes baking time left. Mix the cream, sugar, and butter together in a small saucepan and bring to a boil, about 5 minutes. Take the apple bake out of the oven and immediately pour cream sauce over it.

Maybe add a bit of whipped cream to your bowl of apple bake. If you came this far on this site, you probably do not count calories.
